Pilings need to anchor deep enough that they don't tip over with the flow of mud,
shape is mostly not a factor in deflecting flow. Left, right, straight or vee.
Capture forms that enclose and contain the flow can generate a flat spot with little dirtwork.
One spot that I watched moved the fence 1 1/2 to 2 1/2 feet a year, no problem with keeping the wire tight :) It would only stand about 8 to 10 foot of deflection before the posts had to be moved back up hill. The first time - in the summer - I moved them back to straight, after watching the spring move the next time I put spring kinks in and moved it 2 extra feet up hill in the spring when the digging was easy with the wet ground.
